    Peel the pineapple, cut 4 slices to go in the bottom of the mould and cut the rest into dice.

    Mix the butter and the sugar for a minute or two.

    Add the eggs one by one, then the flour all at once, sifted beforehand with the baking powder and the cinnamon.

    Fold in 30 g of desiccated coconut and the diced pineapple.

  4. Step 4

    Preheat the oven to 180°C.

    In a small buttered and lightly floured mould (19 cm in my case), lay the pineapple slices, then pour in the mixture.

    Bake for 40 minutes. Check it’s done by sticking a knife blade into the cake. It should come out dry.

    When ready to serve, turn the cake out and dust it with the rest of the coconut.
