Vanilla sugar

To always have vanilla sugar to hand, there’s no need to buy it…
Split two or three vanilla pods and pop them in a jar with some sugar.
Top up the sugar as you use it, and every two or three months add a pod or two (I leave the old ones in for a good while, as they carry on perfuming the sugar).
For the sugar, choose a blond, organic cane sugar. You’ll find it in 5 kg bags for between €15 and €18 in organic supermarkets.
