Egg
If you buy them from small organic producers, you’ll see that real eggs aren’t graded by size. Some are small, others large. Some even have two yolks in one shell. Some are pale, others dark.
In spring, hens lay plenty. In winter, with less light and the cold, eggs become scarcer. On farms, lights are used to encourage laying.
For the sake of animal welfare, I’d rather accept that — just like fruit and vegetables — eggs have their seasons, and it’s up to us to adapt rather than want everything all at once. Abundance and year-round availability aren’t always compatible with animal welfare.
