Preparation

  1. Step 1

    Preheat the oven to 240°C.

    Melt the butter in a saucepan until it colours.

    In a salad bowl, mix the eggs and the sugar.

    Add the flour sifted with the baking powder and the cocoa, then the butter.

    Mix and pour a heaped tablespoon of the batter into the moulds of the madeleine tin (if they aren’t silicone, butter them).

    Bake for 4 minutes at 240°C, lower the temperature to 180°C and carry on cooking for 8 minutes.

    If your moulds are smaller (16 cavities, for example), reduce the cooking at 180°C by 4 minutes.
