Jerusalem artichoke and radish-top soup
We keep the radishes to brighten up salads and use the tops in a soup. At €1.20 a bunch at the moment at the Talensac market (our Nantes market) from a few growers, it would be daft not to buy it organic ^^.
For those who don’t know Jerusalem artichokes, here’s a photo :-))

Step 1
Bring the lightly salted water to the boil.
Meanwhile, peel the onion and slice it thinly, peel the Jerusalem artichokes and cut them into thin rounds, wash the radish leaves.
Put the onion and the rounds of Jerusalem artichoke into the water first. Cook for 10 minutes.
Add the radish tops and carry on cooking for 5 minutes.
Blitz.
