Almond and orange brioche

A brioche that’s simple to make, especially if you have a stand mixer with a dough hook!!

About the ingredients used...

I use organic T45 flour for brioches. They rise better.

Buy organic oranges, especially if you’re taking the zest. They aren’t always more expensive in season. Watch out: if you see “untreated after harvest”, it means they were treated before!!

  1. Step 1

    Mix the flour, the sugar, the salt and the orange zest in the bowl of a stand mixer or a mixing bowl.

  2. Step 2

    Warm the milk for 20 seconds in the microwave.

    Beat the eggs with the butter, then with half the milk.

    In the other half, dissolve the yeast with a coil whisk.

  3. Step 3

    Add the butter-and-egg mixture to the flour.

    Pour the yeast-and-milk mixture over the top.

    Knead the dough for a quarter of an hour.

    Put the dough into a previously buttered mould, unless it’s silicone. Add the almonds.

    Leave it to rise for 1 hr 30 min somewhere warm (for me, in my oven on the defrost setting, at 25°C).

    Set your oven to 165°C and put the brioche in from cold for 35 minutes.
