Chocolate chip cookies

Cookies are loved by almost everyone, or nearly everyone, and can be eaten at any time: for breakfast, for le goûter (that traditional afternoon snack), or with some cream for dessert. So, there’s no need to be stingy with the quantity.

I’m also bringing back this recipe published in November 2015 to add some step-by-step photos. This time, unlike in 2015, I’ve chopped up a bar of chocolate. That way, you can choose your own chocolate, which is harder to do when you buy pre-made chips. At Biocoop (a popular organic store here in France), they have a dark chocolate chip version with over 60% cocoa and a milk chocolate one. Here, you can make your cookies with 70% or 85% chocolate.

Cookies are easy treats to make and quite economical. You have full control over all the ingredients when you make them yourself, which is another great thing about it. If you have children, I’m sure they’ll love to help out and get their hands in the dough.

I choose a raw cane sugar, which gives them more flavour. You can also add some coarsely chopped pecans.

  1. Step 1

    If you’re starting with a chocolate bar, cut the squares and use a large knife to make some “chips”.

  2. Step 2

    Preheat the oven to 180 °C.

    Mix the sifted flour with the yeast or baking powder, the sugar…

     

  3. Step 3

    … and the chocolate chips. Mix with a wooden spoon or a spatula.

     

  4. Step 4

    Add the eggs…

    and the butter

    Keep mixing until you can work the dough to make your cookies.

    There are two ways to do it: either make one long log and then cut it into slices, or take small pieces of dough and shape them into cookies.

    Place the cookies on a wire rack lined with a silicone mat or baking paper.

    Preheat the oven to 180 or 185° if you prefer them to be crunchier.

     

  8. Step 8

    Bake for 15 to 18 minutes, depending on your preference and the thickness of your cookies.
