Mendiant turnovers

Preparation

  1. Step 1

    Wash an organic orange, take off its zest and chop it very finely.

    In a mixing bowl, combine the flour, the baking powder, the zest and the sugar. Add the soft butter in small pieces and keep mixing until you have a dough that looks like sand.

    Work in the eggs and the crème fraîche, mix quickly and form a ball.

    Rest it in the fridge for an hour.

    Toast the hazelnuts in a dry pan and rub off their skins (it’s fairly easy once they’re toasted).

    Roll out the dough on a floured worktop and, with a small pastry cutter or a cup, cut out rounds.

    With the offcuts, form a ball again, re-roll it and cut more rounds, and so on until you’ve no dough left.

  3. Step 3

    On one half of each round, place the dried fruit and nuts.

    Fold over without sealing the edges.

    Preheat the oven to 180°C.

  4. Step 4

    Place the mendiants on a sheet of baking parchment or a silicone sheet.

    With a brush, glaze the mendiants with a little sweetened milk.

    Bake for 18 minutes.
