Preparation

  1. Step 1

    Mix the cornflour with 5 cl of milk.

    Heat the rest of the milk and, at boiling point, add a tsp of sugar and the cornflour blended with the milk. Stir constantly until the cream thickens.

    Separate the egg whites from the yolks.

    Whisk the whites to stiff peaks. When they start to firm up nicely, add the rest of the sugar.

    Mix the egg yolks with the fromage blanc.

    Stir in the hot cream, then the egg whites.

    Peel the pears. Cut them into strips and place the equivalent of half a pear in each individual dish.

    Cover with the cream and flaked almonds.

    Brown for two or three minutes under the grill.

    Enjoy cold.
