Lemon navettes

Provençal navettes (little boat-shaped biscuits from Provence) were made for Candlemas and were said to bring luck to those who got hold of them.

There are several recipes. Here’s one!

Preparation

For the lemon...

Always choose an organic lemon when you use its zest.

For a very lemony taste, I put the zest in small pieces in a coffee grinder and reduce it almost to a powder.

  1. Step 1

    Beat the egg yolks with the sugar until you have a frothy mixture.

    Add the softened butter and carry on beating.

    Pour in, all at once, the flour sifted with the baking powder, then the lemon juice and its zest.

  2. Step 2

    Whisk the egg whites to stiff peaks.

    Gently fold them into the previous mixture.

  4. Step 4

    Heat your oven to 180°C.

    Put the batter into the cups of your mould.

    Bake for about 15 minutes (the cooking time depends on the size of your moulds)
