Buy extra green beans for a recipe at the weekend and make this little salad on Monday evening with what’s left over. If there are still a few beans left, dress them the next evening with tomatoes and parsley or mozzarella.

  1. Step 1

    Steam the green beans for 30 minutes (or boil them for 20 to 30 minutes, to taste)… Prick them with a fork or taste one to see if they’re done to your liking.

    Make the vinaigrette and pour it over the well-drained beans, then add the diced feta and the walnut halves.
