Pork shoulder with orange
Marie, this weekend I’d meant to cook duck, but when I got your card I quickly changed my mind so I could share your lovely postcard of a pig ^^.
Everyone’s going to thank you — this orange pork recipe is so good ^^.

Step 1
Cut the pork shoulder into strips and remove the fat if you don’t care for it.
In a cast-iron casserole if possible, brown the meat in a little fat with the shallots.
Press the oranges and add their juice to the casserole.
Leave to cook over a low heat for 40 minutes.
Serve with semolina (couscous). It’s very easy to make. Buy it from an organic shop.
Put roughly a bowlful of semolina into a large bowl. Bring the same volume of water as semolina to the boil and pour it over the semolina. Add a little salt, cover your large bowl and leave to swell for 5 minutes.
