    Wash the broccoli and break off the florets so they’re as small as possible. They’ll cook faster.

    Cook them in a steam oven (10 minutes) or in a pan of lightly salted boiling water, also 10 minutes. Check the cooking is to your liking and carry on if not.

    Toast the hazelnuts dry in a pan and remove their skins.

    Preheat the oven to 190 °C.

    Roll the dough out into a round on a floured surface.

    On one half, place the coulis, the finely cut broccoli, the ham and the toasted, roughly chopped hazelnuts; sprinkle the whole with salt.

    Make a turnover with the dough by folding over the half with no filling on it. Press firmly on the edges to seal the dough.

    Bake for 18 to 20 minutes.
