Madeleines de Commercy

A classic inspired by Sophie Dudemaine’s book “Les Madeleines”. I lightened the recipe a little!

Preparation

  1. Step 1

    Preheat your oven to 240 °C.

    Melt the butter for one minute at 450 W in the microwave.

    Beat the eggs quickly with a whisk.

    Add the flour sifted with the baking powder and the sugar, then, after mixing a little, the butter.

    Mix until smooth. If you have a stand mixer, use it. The flat beater gets you to a good result very fast.

    Pour a tbsp of batter into each madeleine mould cavity (if it’s not a silicone mould, butter the cavities first).

    Bake for four minutes at 240 °C, lower the thermostat to 180 °C and carry on baking for four minutes.
