Apple-filled brioche
A brioche with lightly caramelised apples for breakfast. That way, no need to go looking for your morning fruit ^^.

Preparation

Step 1
Mix the egg, the milk, the salt and 70 g of sugar. Add the flour and the yeast.
Knead for 10 minutes and add 75 g of butter. Carry on kneading for 10 minutes.
Put the dough in a bowl, cover it with a cloth and leave it to rise somewhere warm (for me, in the oven on the defrost setting at 25°C) for 2 hrs.

Step 2
Meanwhile, peel the apples, cut them into dice and brown them in the remaining 25 g of butter and the 30 g of sugar.
Cook them covered for about 10 minutes.

Step 3
Knock back the dough.
Put it on a baking sheet (silicone or other, so you don’t have to handle it afterwards… I say that because I didn’t think of it and had a bit of a struggle later… and it suffered a little too!).

Step 4
Roll it out into a rectangle and place the apples in the centre.
Cut strips with scissors as in the photo.

Step 5
Fold the strips towards the centre.

Step 6
Leave the brioche to rise again for an hour.
Put it into the cold oven set to 30 minutes at 165°C.
