Florentines, or near enough

I chose the recipe by Trish Deseine, well known to chocolate addicts. In her book Je veux du chocolat (“I Want Chocolate”)!, she gives a recipe for “florentines (well, almost)”. Having strayed from that recipe, I suppose I’ve drifted even further from the original…
Anyway, I think they’re very good, since I make them every year ^^.

Preparation

  1. Step 1

    Heat the butter, the sugar and the honey in a pan.

    Gather the dried fruit and nuts in a bowl.

    Off the heat, add the raisins, the candied fruit and the almonds, mixed beforehand with the flour

    Preheat the oven to 180°C.

    Make little mounds on a tray lined with a silicone sheet or buttered baking parchment.

    Bake for 18 minutes.

    Let cool.

    Melt the chocolate, cut into pieces, in the microwave for 4 minutes (450 W or defrost setting).

    With a spoon, stir it a little so it’s nicely smooth.

    Dip the underside of the florentines in it and put them back on the tray to set (chocolate side up).
