A comforting dish in winter. If you’d like to make this recipe, order the pork cheeks, as the charcutiers don’t always have them (there are only two per pig!!).

Preparation

  1. Step 1

    Peel the onion, cut it into thin strips and sauté it in a little oil.
    Add the cheeks and brown them on both sides.

    Add the wine, the stock, the carrots peeled and cut into rounds, and the mushrooms brushed clean and sliced.

  2. Step 2

    Let it cook for 1h30.

    Stir in the potatoes, peeled and cut into two or three. Carry on cooking for 20 to 30 minutes. Check it’s done with a knife blade — it should slide in easily.
