Buy organic flour
It would be a shame to make your own bread with a flour containing pesticides and insecticides… you might as well buy it from a bakery in that case, the baker being better at kneading than us or our breadmaker.
I recommend T65 for all your breads except sandwich loaf, where I use T45. You can use a less refined flour like T80 (except for the sandwich loaf)… Then again, if you have children, they might find the bread too coarse. We wouldn’t want to put them off organic :))
There’s plenty of local organic flour in supermarkets and farm shops. There are even co-ops, like Pain Virgule, that offer breads and flours.
