Red mullet with raisins and couscous

Step 1
Wash and dry the red mullet (check your fishmonger has removed all the scales).
Peel the onion and cut it into thin strips. Sauté it in a frying pan with a little oil.

Add the peppers, the raisins and the red mullet, and season lightly with salt.
Put 120 g of couscous in a large bowl with a pinch of salt. Bring the same volume of water as couscous to the boil (one bowl of couscous = one bowl of water). Pour it over the couscous, cover the bowl and leave to swell for five minutes.
After 3 to 4 minutes of cooking, turn the red mullet over and carry on cooking for 3 or 4 minutes.
Serve immediately on piping-hot plates.
