Tiramisu (the classic)

Contrary to what you might think, tiramisu is a very easy and very quick dessert to make. People generally love it. Once you can make it, you’ll struggle to order this iconic Italian dessert off a restaurant menu. Like panna cotta, it’s always marked up.

Don’t hesitate to add your own twist. There are loads of variations on this dessert. Its only weak point is the calorie count. At more than 350 calories per 100 grams, best not to serve it every day!

If your tiramisu isn't firm enough...

Some mascarpone creams aren’t very firm, which gives the tiramisu less hold.

In that case, soften a sheet of gelatine in a bowl of water for five minutes.

Heat the amaretto to dissolve the softened gelatine sheet.

Carry on as before for the rest.

    Quickly dip 12 sponge fingers (ladyfingers) in the coffee and line a large dish, or 6 small ones.

    Separate the egg whites from the yolks and whisk the whites to stiff peaks (with a small electric whisk it’s very quick).

    Beat the yolks with the sugar. Add the mascarpone, the amaretto, then gently fold in the egg whites.

    Pour over the coffee-soaked biscuits.

    Leave to rest for a few hours, or even overnight…

    When you’re ready to serve, dust with cocoa through a fine sieve.
