Pork knuckles with cabbage, apple and orange

With cabbage, we plunge into winter… We’ll be eating a lot of it until spring, so we vary the accompaniments. Here, we flavour it with orange and serve it with apples. I bought my knuckles already cooked. If you cook them yourself, add two hours’ cooking.

Cabbage is relatively unaccommodating. If you’d like to serve it with a red wine, choose a light one: a Pinot Noir, for example.

  1. Step 1

    Bring water to the boil in a casserole.

    Wash the cabbage and cut it into 4 or 8 (reckon a kilo of cabbage for 3).

    Blanch it for 3 minutes in the boiling water. Drain it and bring fresh water with a little salt back to the boil in the casserole.

    Cook the cabbage for a quarter of an hour. Drain it and cut it up.

    Preheat the oven to 180°C.

    In a casserole dish, put the pieces of cabbage, the orange juice, the apple cut into slices (peeled or not), then the knuckles.

    Bake for 30 minutes.
