It’s the quality of the chocolate and the fruit that makes the difference. Don’t hesitate to double or triple it to give some at Christmas. Compared with the good chocolates you buy in the shops, these are very economical. They’re easy to make and within everyone’s reach.

Which products to use?

Use the chocolate you like to nibble. Avoid cooking chocolate, which is very high in sugar, and go for bars with 70 or 80% cocoa.

Choose blanched almonds, that is, without the skin. If you can’t find them, you can blanch them yourself by dropping them into a small pan of boiling water for 5 minutes. Drain them and then squeeze each almond between your thumb and forefinger. Dry them on kitchen paper.

Go for plump, tender golden raisins.

And for the pistachios, use raw unsalted ones.

 

  1. Step 1

    Melt the chocolate, broken into pieces, in a bowl or small mixing bowl (if you double it) for 4 minutes in the microwave at 450 W.

    With a tablespoon, make rounds of chocolate on baking paper.

    Very quickly (before the chocolate has time to harden), place on each little mound a raisin, a blanched almond, some pistachios and a candied orangette.

    When the chocolate is hard, store the mendiants in a tin.
