Martine’s bacon and prune cake

If you like loaf cakes, you have (or should get someone to give you) Sophie Dudemaine’s cake book, and if you’ve followed every instalment, you might even have in your cookery library her Cake Show, volume 2, where she lets her fans suggest their own cake recipes.

Here’s Martine’s. You couldn’t make it up: smoked bacon and prunes. I’m offering it to you with a few variations.

Sophie Dudemaine's tips...

For successful cakes, Sophie recommends:

– not mixing the batter too much, as that aerates it and forms holes during baking (cool ^^);

– pouring the batter into the tin without trying to spread it out.. the more you mess up the edges of the cake, the less it rises during baking;

  1. Step 1

    Preheat the oven to 230 °C.

    Mix the flour sifted with the baking powder, the eggs, the milk and the oil.

    Add the stoned prunes cut into small pieces and the smoked bacon, which you’ll have fried in a pan with no added fat.

    Bake for 5 minutes. Lower the thermostat to 180 °C and carry on baking for 35 minutes.
