Ham, walnut and Comté waffles

No need to plan anything else for *l’apéro*, as the waffles are quite filling. In fact, I’d say skip the starter if you were thinking of making one!!

These waffles will be perfect of an evening with a green salad, or as a side (lunch or dinner) to a mixed salad.
If you have too many, freeze them. Put them in the oven from cold, set to 180 °C for ten minutes. You’ll see, they’ll be lovely and crisp again.

You’re spoilt for choice between Loire wines (Vouvray, Coteaux du Layon, de l’Aubance…), south-western wines (Côtes de Gascogne, Côtes de Duras, Bergerac…), Alsace wines….

After that, it all depends on your cellar…. And there, sometimes you’re rather less spoilt ^^.

  1. Step 1

    Separate the egg yolks and whites and whisk the latter to stiff peaks.

    With a small beater, mix the flour sifted with the baking powder, the pinch of salt, the egg yolks, the milk and the butter.

    Add the walnuts, the roughly grated Comté and the ham cut into pieces. Gently fold the whisked egg whites into the mixture.

    Chill until you make the waffles.

    To make the waffles, follow the instructions for your waffle iron (mine takes 3 minutes 45).
