Duck breast in a soy-ginger marinade
You could make something more complicated, but when you’re short of time and want to showcase the duck, this recipe does very nicely.

Step 1
Take the duck breast out at least 1/2 hr before cooking it.
If you don’t like the fat, remove the skin…

and cut the fillet into slices.

Make the marinade: mix the soy sauce, the honey, the vinegar, the oil and the ginger.

Marinate the duck for 30 minutes to an hour (an hour is better).

Peel and grate the carrot.

Step 6
Cook the rice: one and a half volumes of water to one volume of rice with a small pinch of salt.

Step 7
Five minutes before the rice is done, cook the duck and the carrot in a pan.

Step 8
Meanwhile, prepare a green salad if you like.

Serve piping hot.
