Cherry jam tart

This tart is taken from the book Love Italy: à la découverte d’un paradis gastronomique. I just swapped the blueberry jam for cherry jam, because last summer I bought lots of it in the Basque Country.

    Make the pastry:

    Beat the butter and the sugar. Add the egg and the two flours and carry on mixing a little.

    Shape into a ball and put it in the fridge for at least an hour.

    Roll the pastry out into a buttered dish.

    Spread the jam over it.

    Roll out the pastry trimmings, cut them into strips and lay them in a lattice over the tart.

    Preheat the oven to 160°C and bake the tart for 40 minutes.
