Tortilla dough

Contrary to what you might think, tortillas are quite easy to make if:

– you make the dough as described;

– you roll it out thinly with a rolling pin, making sure both your work surface and the piece of dough are well-floured;

– you carefully move it to the plancha (a flat griddle, which is ideal because even if the tortilla is large, it won’t hang over the edges) or a pan, using the rolling pin as a support;

– you keep an eye on the cooking (stop when it starts to bubble up).

Don’t make the tortillas in advance; keep the rest of the dough in the fridge and prepare them at the last moment. They tend to harden if you don’t eat them right away.

Spoilt for choice when it comes to fillings

A few filling ideas:

chicken/ onions/ courgettes

chicken/ guacamole/ onions

tomato/ smoked trout/ salad

Scallops/ cèpes (wild porcini mushrooms)/ cured ham ….

  1. Step 1

    At least an hour before making your tortillas, prepare the dough…

    Put the flour, salt, sugar, and softened butter cut into pieces into a stand mixer.

    Add the water.

    Form a ball with your dough and put it in the fridge.

    Flour your work surface.

    Cut your piece of dough into 6 parts.

  2. Step 2

    Roll out the dough thinly, making sure there is flour on and under the piece of dough (so it doesn’t stick to the rolling pin or the work surface… which would tear the dough).
