for a special meal, a Pacherenc du Vic-Bilh (a sweet white from south-west France)

  1. Step 1

    Preheat the oven to 180°C.

    Roll out the puff pastry in a tart dish and prick the base with a fork.

    While the pastry bakes, reheat the ceps in a covered pan and cut the scallops in half through their thickness.

    Out of the oven, remove the beans or weights and arrange the ceps on the tart base, then the scallops.

    Season with salt and pepper.

  4. Step 4

    Carry on cooking for 5 minutes.

    Serve at once.
