Porcini

If you’re cooking fresh porcini, brush them and wipe them clean with kitchen paper. In a pan, soften some shallots or onions in butter. Add the finely sliced porcini. Season with salt and let them cook, stirring very regularly (or put a lid on). Add more butter as needed during cooking. At the very last moment, stir in some finely chopped parsley.
