Pretzels
The bretzel (pretzel), a familiar sight at Christmas markets, is a sort of bread poached in a baking-soda solution… like the bagel ^^.

Preparation

Step 1
Make the poolish: mix 25 g of flour, 2.5 cl of lukewarm water and the yeast. Leave it to rise for 30 minutes somewhere warm.

Mix the rest of the flour, the salt, the soft butter, the rest of the lukewarm water and the poolish, and knead for 10 minutes.
Leave this dough to rise for 2 hrs somewhere warm.

Step 3
After the two hours, knock back the dough and cut it into four pieces.
Bring 2 litres of water to the boil in a pan. Add a tablespoon of bicarbonate of soda.
Make 4 ropes 60 cm long and shape them into pretzels.

Preheat your oven to 190°C.
Drop the pretzels one after another into the boiling water.
When they rise to the surface, lift them out with a slotted spoon, set them on kitchen paper, then place them on a tray lined with a silicone sheet or baking parchment.
Sprinkle them with seeds (poppy, linseed or others) and bake them for 20 minutes.
Eat them very promptly (within two hours).
