A southern wine such as a Saint-Chinian.
You can make this recipe in any season, because you can find potatoes all year round, or almost — but it’s still nicer in winter.
For the potatoes, choose a floury variety (Bintje, Mona Lisa…) and get large ones. At the market, you’ll find them organic at around €2 a kilo.

Peel the onion and slice it finely.
Peel and wash the potatoes.
Grate them with a coarse grater.
Press them in kitchen paper until they’re relatively dry (do your best, you’ll need a good ten sheets of paper).
Mix them with the sliced onion.
Beat the eggs as for an omelette with the salt, the pepper and the nutmeg.
Add to this mixture the grated potatoes, the finely sliced onion and the chopped parsley.
Preheat the oven to 180°C.
Pour the batter into a dish lined with buttered baking parchment.
Bake for 20 minutes.
While it bakes, grate your Comté (you can choose another cheese to taste, but go for block cheese rather than pre-grated).
Take it out of the oven (the edges of the “cake” should come away slightly from the tray).
Spread it out on a worktop.
Spread the cheese and the slices of ham over it (you’ll have two layers of ham).
Roll the cake up on itself, making sure it’s nice and tight.
Wrap it in the sheet of baking parchment you used for baking and put it back in the oven for 25 or 30 minutes.
Cooked, it will look like this…
Cut it into slices and serve it with a nice green salad.
