Pear, walnut and Roquefort salad
Here’s a salad for a meal at home or for the lunch box, made with seasonal produce: lamb’s lettuce, walnuts and pears.
Round it off with a little ham and good bread.

Step 1
Make a vinaigrette in a bowl, toss in the lamb’s lettuce and share it between the plates.
Peel the pears, remove the cores and lay them on the salad.
Add the walnut halves, the pieces of Roquefort and the shredded ham on top.
Serve straight away. Otherwise, squeeze lemon juice over the pears to stop them going brown.
