  1. Step 1

    Wash the broccoli and cut it into florets, as small as possible.

    Steam them for 10 minutes at 100 °C or cook them in a pan of salted boiling water for the same time.

    Bring a large pan of water to the boil, salt it and add the pasta so the broccoli finishes cooking at the same time as the pasta. To do that, check the cooking time on the pasta packet.

    Two or three minutes before the end of cooking, toast the pine nuts in a small dry pan. Watch them closely so they don’t burn.

    Drain the pasta and the broccoli.

    Put them on warm plates that you’ve popped in the oven at 85 °C for a few minutes.

    Add the ham, the parmesan and the pine nuts.

    Serve piping hot.

    Don’t forget that hot pasta won’t wait. Better to keep your guests waiting, if you have any, than the pasta.
