Langoustines in a tabbouleh reinvent it into a pretty dish for the evening!!

And as a nibble with drinks, you eat the claws and heads with a Muscadet! Isn’t life grand ^^?

The ingredients...

It’s always the quality of the ingredients that makes the quality of the dish… well, almost!

You want to buy live langoustines at the market. Like everything at the fishmonger’s, you watch the prices and buy when they’re cheaper (right now you can find lovely live langoustines from the Croisic fish market (for the people of Nantes) at €18, or even less.

I buy my tomatoes from Marc Peyrey (he has a website)… I go for the Marco recipe, which is truly excellent; you can even add a little of the oil from the packet if you like your tabbouleh a touch richer and more fragrant.

For the peppers, the ideal is to have frozen some in season… Otherwise, you fall back on Monsieur Picard’s, who, by the way, really ought to offer an organic version 🙁

You try to grow your own mint in the garden or on the balcony… it’s an easy plant to grow.

You buy an organic Muscadet… for us, Joël Bouvet’s, which is excellent at a very reasonable price ^^

  1. Step 1

    Cook the langoustines for two minutes in a steam oven at 100°C, or for two minutes in a pan of salted boiling water.

    Let them cool.

    Make the couscous: pour some couscous into a bowl, then tip it into a bowl at least twice as big.
    Fill the bowl you measured the couscous in with water and bring it to the boil in a pan. Pour the water over the couscous (one measure of couscous = one measure of water) and leave to swell for 5 minutes.

    Squeeze the lemon and mix its juice with the oil. Add the couscous (separate the grains with a fork), the diced peppers, the confit tomatoes cut into small pieces and the shredded mint.

    Peel the langoustines, cut them into pieces and stir them into the couscous.

    Keep chilled until ready to serve.
