Duck and dried fruit tabbouleh
Another energy-rich recipe…. because it’s winter and we need good calories — useful ones, that is!!

Step 1
Make the couscous: put a full cup of couscous in a container with a lid, along with a small pinch of salt. Fill the cup with water and pour it into a pan to bring it to the boil. Pour it over the couscous and leave to swell for 5 minutes. With a fork, separate the grains. Squeeze the lemon and pour the juice over the couscous. Let it cool.
Cut the prunes into small pieces, remove the fat from the cured duck breast, wash and chop the parsley.
Mix all the above ingredients, plus the raisins, into the couscous.
Dry-toast the pine nuts in a small frying pan and scatter them over the salad.
