Generally, children love the sweetness of sweet potato… maybe more as a mash than a soup, but you can still give it a go ^^.

A sweet potato can weigh anywhere from 250 g to 1 kg. The medium 500 g ones are right for a dish for two (mash, soup, pan-fries…).

  1. Step 1

    Peel and wash the vegetables.

    Bring a litre of water to the boil in a pan with a little salt.

    At boiling point, add the carrots and cook for 15 minutes.

    Add the sweet potatoes and carry on cooking for 15 minutes.

    Sprinkle with a pinch of coriander and blitz the velouté.

    Add a little water if needed if you find it too thick.
