Breton crab burger

You can plan these little burgers as a starter, or as a one-dish supper by doubling the quantities.

Preparation

  1. Step 1

    Make the galette batter by mixing the flour, the water and the salt.

    Leave to rest for at least an hour.

    Heat a galette pan for a minute over high heat with no fat. Put on a little knob of butter and spread it round, then add the batter.

    Cook for about two minutes on each side (turn the galette when it comes away from the pan).

    You’ll have enough for 3 galettes.

  2. Step 2

    Pick the crab.

    Cut the avocado into dice and squeeze lemon over it.

    With a pastry ring, cut out the galettes and assemble as in the photo: a little galette, a layer of crab and avocado, a little galette…

    You can add mayonnaise or vinaigrette if you like. Walnut oil goes very well with crab. Use a mild vinegar like a white balsamic.
