Apple mousse
This recipe is inspired by an October 2015 issue of the magazine Papilles.

Step 1
Wash the apples and cut them into pieces, keeping the pips and skin.
Put them in a saucepan with the sugar, the spirit, and the zest and juice of the lemon, and cook, covered, for 20 minutes.
Then pass the compote through a food mill or a smoothie maker (if you’re in a hurry, blitz it with a stick blender).
Leave it to cool in the fridge for a few hours.
Before serving, whip the cream to soft peaks. Gently fold it into the apple compote.
Serve the mousse in small glasses, with speculoos-type biscuits if you like.
