Cooked red beetroot

There are two kinds of beetroot: the vacuum-packed sort and the kind you buy from the grower at the market… If you serve the first to your children, don’t be surprised if they don’t like it!! Buy the second — the one that takes you back to childhood, if you had some in the family veg patch… It’s delicious and very good for you.
In the book « les 100 aliments pour rester en forme » (100 foods to stay healthy), Charlotte Haigh says that, on top of detoxifying us and purifying the blood, it’s packed with nutrients essential to our immunity: iron for producing antibodies, manganese said to be an anti-cancer agent, just like betanin. And I won’t list all its benefits — no need to plunder the whole book.
We look at beetroot differently now. Wonderfully versatile in the kitchen and, at €4 a kilo cooked and organic (so €1 a head), there’s really no reason to go without…
