A quick dessert for winter, when there’s little fruit around and you need some energy!

Eat this kind of mousse quickly, as it has a tendency to turn watery.
Blitz the walnut kernels roughly.
Wash a clementine and take off its zest.
Mix the cornflour with the cold milk.
In a pan, put the egg yolks with 50 g of sugar.
Add the milk, the very finely cut zest and let it thicken on the heat, stirring constantly (about 5 minutes).
Let it cool.
Whisk the egg whites to stiff peaks. As they start to firm up, add the rest of the sugar.
When the previous mixture is cold, fold in the mandarin syrup, the walnuts (keep a few for decoration), then gently the egg whites.
Chill for a few hours in the fridge before serving.
