A Coteaux du Layon (a sweet white wine from the Loire). For us, the one from the Gérard Leroux estate, which was among the first in France to go organic, back in 1964.

For those in Nantes, it’s at the Natura fair in Rezé.

Its red wines are excellent too and, unlike some other organic estates, the vintages are reliably consistent in quality.

So you can buy them with your eyes closed! Then again, it’s also a pleasure to taste them… it gives you a chance to chat with the winegrowers ^^.

  1. Step 1

    Preheat the oven to 210°C.

    Roll out a round pizza dough on a floured worktop.

    Score the dough as in the photo (8 cuts around the edge and 4 small ones in the middle).

    Spread the tomato coulis over it, then the smoked trout cut into pieces and the dill.

    Fold the dough back as in the photo so that it forms a star.

    Bake for 13 to 15 minutes (depending on the thickness of the dough and your taste).
