  1. Step 1

    Put some couscous semolina into a small measuring bowl. Tip it into a large bowl with a little salt. Fill the same measuring bowl with water and bring it to the boil in a pan. Pour the water over the semolina, put a lid on top and leave to swell for 5 minutes.

    Tip the semolina into a small bowl or a large bowl, squeeze the lemon over it (if it has no pips, otherwise squeeze it into another bowl to remove the pips first). Mix. Add the diced ham, the banana in rounds and the cashews. Chill in the fridge and serve with a nice lamb’s lettuce salad.
