Split pea and pine nut soup

A split pea soup — the winter peas. Give it a go if you don’t know them. They’re relatively cheap and you’ll find them in any health-food shop.

Split pea and pine nut soup

Preparation

  1. Step 1

    At least 6 hours ahead, set the split peas to soak in a large pan of water.

  2. Step 2

    Drain them, rinse them and bring them to the boil in a large pan of water.

    Once boiling, add the leeks, washed and cut into lengths.

    Let it cook for an hour. Season with salt and blitz the soup.

    At the last moment, dry-toast some pine nuts and add them to the soup.
