Cooked brown shrimp

If you can find brown shrimp from our own coast, choose them over ones shipped from the other side of the world. They’re often sold live. To cook them, follow these tips:
– Bring a large pan of water to the boil with a big handful of salt.
– Once boiling, tip in the shrimp. When a good third of them rise to the surface, turn off the heat and leave them in the water for five minutes. Then drain and peel them.
And if a friend offers to take you out to catch them, all the better. You’ll enjoy the fresh air and feast together afterwards.
